I wonder why the disparity of ages between the 2 censuses?

In the 1881 census 29 Newman Street Marylebone, London.
Rosa A. Dupuis, lodger, unmarried, age 56, governess, born Hampstead Road, Middlesex.
The head is Joseph Dimbleby, his wife, another lodger and another couple. Joseph is a Carpenter and Joiner, his wife a pianoforte silker, and the other lodger is a pianoforte case maker. Since Rosalia is related to the Symondsons,
I wonder if these people worked for Adolphus Symondson a pianoforte maker?
